Ask Nichole (Project 3)

Question/Problem:

Hi Nichole my name is Linda. My child will absolutely not touch anything healthy. He HATES fruits and vegetables with a passion. What can I do to incorporate more healthy choices in diet without him throwing a fit?

Answer/Solution:

Hello Linda! Thanks for writing me. This is a very common issue in young children so don’t freak out about it! It’s no big deal and I have several solutions you can try. The first solution could be to limit the amount of television your son is watching. There are so many commercials out there put on by fast food companies that manipulate your children into eating unhealthy! They promise toys and desserts with every meal and this is simply not the reality of every meal. Limit his television watching and send him outside to play with his friends. The second solution I can offer you is to provide an incentive to your son when eating something healthy. Maybe tell him he is allowed to eat dessert after dinner if he finishes his entire meal for every meal. Taking baby steps to get your child eating a better diet is very acceptable! Below I will include some fun healthy recipes I’ve had growing up as well as what my little brother and sister eat now! They disguise healthy foods and put a fun twist on eating. (All found off the “Super Healthy Kids” Website).

No Bake Easter Egg Fruit Tarts:

Ingredients

  • 1 cup – almond butter

  • 1/4 cup – honey

  • 2 tsp – vanilla extract

  • 1/4 teaspoon – salt

  • 2 cup – oats, dry

  • 3/4 cup – Greek yogurt, vanilla

  • 3/4 cup – strawberries

  • 3/4 cup – blueberries

  • 1 medium – banana

  • 3/4 cup – green grapes

Directions

  1. In a microwave safe bowl, add almond butter, honey, vanilla and salt. Microwave for 20 seconds, then stir until smooth.

  2. Take 1 cup of the oats and place in a blender. Blend until the oats are finely chopped and resembles flour. Set aside.

  3. Add the other cup of oats to the almond butter mixture and stir. Slowly add in a little of your homemade oat flour at a time until you get a mixture that you can form into a crust. Depending on your brand almond butter the amount of flour may vary.

  4. Take small amounts of the mixture and form Easter egg shaped disks. Place onto parchment paper or foil for easy cleanup.

  5. Once all the Easter eggs are formed, spread on a layer of greek yogurt. Top with sliced fruit to make your designs and enjoy!

Owl Rice Cakes:

Ingredients

  • 4 each – rice cakes, brown rice, plain

  • 1 medium – banana

  • 4 tablespoon – peanut butter, all-natural

  • 1 cup – blueberries

  • 1 medium – apple

  • 1 medium – carrot

  • 1 cup – cereal, Cheerios

Directions

  1. Lay out rice cakes on a baking sheet (this will keep the mess in one area).

  2. Slice banana and set aside.

  3. Spread peanut butter over each rice cake and then place 2 slices of banana towards the upper part of each of the rice cakes. This will serve as your owl's eyes. Dab a small amount of peanut butter on the center of the owls eyes and add a blueberry for the pupil of the eye.

  4. Slice apple in half and then slice the halves into very thin wedges (1/8 inch thick). Place 2 onto each rice cake, (peel side outward) to serve as the owl's wings.

  5. Peel carrot and slice thinly. Using 4 slices, cut into triangles for the nose.

  6. Finally, add some cheerios for feathers between the wings.
